Just found out I'm redundant after stress leave—what should I do?

Get a doctor's certificate for the time you took off, then have them change it to personal leave (sick leave). Then your annual leave will get paid out. Also, they cannot notify you of a redundancy when you are on leave. So go back to the doctor and get a month of stress leave. Use up that sick leave as soon as possible.
 
If you've got an enterprise agreement, definitely check that out! If you're on a contract, refer to that, or look at the award rate for your industry.

There absolutely has to be a minimum notice period!

Stress leave it’s actually a form of workers’ compensation. I know that now.

If you feel redundancy creeping in, you can stretch things out with workers’ comp. And if you do get let go while on it, they can investigate for up to two years after to check if the company was retaliating. That’s the real, unfiltered truth.
